Comfort Soul Food: Individual Chicken Pot Pies were on the menu for a January dinner party for 12. The filling began with juicy, roasted herb chicken, sautéed carrots, butternut squash, fennel, green apples, shallots, garlic and peas in a light white wine herb broth. The ramekins were then delicately cloaked with flaky pastry and baked off until golden and bubbling!
